My version of O'Charley's Loaded Potato Soup

Homemade O'Charley's Loaded Potato Soup
I have to admit this recipe idea came from my husband, after tasting the creamy sauce I made for Crispy Cheddar Chicken (recipe from Pinterest) the other night. He recommended I add potatoes and make it like O'Charley's Loaded Potato Soup and let me tell you, this recipe will not disappoint you. Its gonna stick to your bones for a few years, but its oohh so good and I think tastes just like O'Charley's Loaded Potato Soup.

Ingredients:
2 (28 oz.) cans Cream of Chicken Soup
1 stick of butter
1 (16 oz.) container sour cream
2 cups shredded cheese (I used Kraft 3 cheese blend)
1 (28 oz.) can of milk (reuse cream of chicken soup can)
Garlic Powder, to taste
Salt & Pepper, to taste
1 large Russet Potato (or a couple smaller potatoes) cut in shoestring like pieces
6 pieces of bacon, crumbled
1 bunch green onions, diced

Directions:
First, melt the stick of butter in large pot over medium heat. Next, pour both cans of cream of chicken soup and container of sour cream and whisk till blended together. While thats heating together, cut the potatoes into short shoestring pieces (like O'Charleys does), boil those for 5 minutes on high heat. Add shredded cheese to soup mixture until melted. Drain potatoes and add to soup. Cook on med-low for 20 to 30 minutes stirring occassionally. Add bacon & onions or more shredded cheese (if desired) to garnish. Enjoy!!!
