Homemade O'Charley's Loaded Potato Soup |
Ingredients:
2 (28 oz.) cans Cream of Chicken Soup
1 stick of butter
1 (16 oz.) container sour cream
2 cups shredded cheese (I used Kraft 3 cheese blend)
1 (28 oz.) can of milk (reuse cream of chicken soup can)
Garlic Powder, to taste
Salt & Pepper, to taste
1 large Russet Potato (or a couple smaller potatoes) cut in shoestring like pieces
6 pieces of bacon, crumbled
1 bunch green onions, diced
Directions:
First, melt the stick of butter in large pot over medium heat. Next, pour both cans of cream of chicken soup and container of sour cream and whisk till blended together. While thats heating together, cut the potatoes into short shoestring pieces (like O'Charleys does), boil those for 5 minutes on high heat. Add shredded cheese to soup mixture until melted. Drain potatoes and add to soup. Cook on med-low for 20 to 30 minutes stirring occassionally. Add bacon & onions or more shredded cheese (if desired) to garnish. Enjoy!!!
I love potato soup! It's my most favorite comfort food. I have two recipes I alternate between. I can't wait to try this one. Might have to add it to the rotation ;)

:) It was very yummy! The only difference I found was the little bits of chicken (from the cream of chicken soup) are in mine, vs. not in O'Charleys...but it didnt alter the taste any. Hope you like it!
